An Irish chef? You read that right!

I grew up in Ireland, enjoying simple dishes and comfort food, but it wasn’t until a family camping trip to France that I had my first “exceptional food” experience. From that first bite of fleur de sel on a medium rare steak (not exactly standard fare for an 12 year old) a passion for great food and a love of dining was born.

Now with over 20 years of professional culinary experience, I've had the privilege of working in some of the world's most picturesque locations, creating unique dining experiences for the rich and famous. My culinary journey has taken me to private chalets across the Alps, luxurious villas along the Cote d'Azur, and several years aboard private yachts in the Caribbean, the Mediterranean, the Baltic Sea, and even as far as the Maldives. In another life, my wife and I also ran a successful secret supper club in Berlin (that eventually evolved into a restaurant)! But regardless of the location or client, one thing has remained a constant – the desire to share my passion for fine food and for the art of dining well.

Eventually, my path led me to working full-time for a Toronto-based family, which I did for the past 10 years. As their private chef, I cooked for them and organised parties, and created menus to suit any occasion at their various properties in Muskoka, Toronto, the Bahamas, as well as at their vacation rentals across Europe and the US.

Recently, my wife and I (and our dog Cookie) relocated to Edmonton, Alberta, where we plan to spend more time outdoors, but no less time in the kitchen. I am looking forward to continuing my private cooking journey here, bringing the flavours of my diverse culinary background to your table, and continuing to create memorable dining experiences both here in Edmonton and abroad.
